Egg Scrambles!


This is such a delicious easy breakfast.  It's so fast you can make it everyday.  It's so beautiful you can serve it at your next brunch or special occasion.

I came up with this because I love having my scrambled eggs full of veggies...but my family doesn't.  So I never made them....until now!
There are so many reasons why I love this....let me tell you a few!
This recipe is so easy and versatile!  There are so many combinations I couldn't list them all.
If you know what you need you can make the veggie combination ahead of time or...
You can easily do up a topping buffet and everyone can individualize there own scramble.
No need to guess how much toppings you'll need to buy from the store, or who likes what.  Just open the cans and whatever doesn't get used goes back in the pantry.  No wasted time chopping and throwing away what doesn't get used!
Now these eggs get baked in the oven but let me share an amazing tip my sister Natalie taught me.
for those mornings when you don't have time or don't want to wash frying pans...just dump toppings in a bowl, throw the egg in, mix and put in the microwave for 1 minute!!!
It's faster than pouring a bowl of cereal really!!!  And your children will start the day off with some protein and veggies!  Get Crackin!

Here is the versatile recipe

If you are baking in oven, preheat to 350 degrees F and pre spray the muffin tin
If you are doing the quick RIGHT NOW method...just grab a bowl or microwave container

Add any of the following toppings:
Thrive FD Red Peppers, Thrive FD Green Peppers, Thrive FD onions, Thrive FD Diced Tomato, Thrive FD Spinach, Thrive FD Broccoli, Thrive FD Mushrooms, Thrive FD Green Chili
and for meat...try
Thrive Ham TVP, Thrive Bacon TVP, Thrive Sausage TVP
***We even have Thrive Taco TVP, Throw that in with some Thrive FD Diced Tomato, Thrive FD Corn, Thrive FD Green chilis for a mexican fiesta scramble!
Really the possibilities are endless!

Then throw an egg or two on top depending on how much room is left in what you are cooking with.
If you want a little something else...try adding some milk or sour cream to the egg mixture as well as salt and pepper.
Don't forget about shredded cheese......mmmm cheese
1 egg = 1 minute in microwave
1 egg = 15 minutes in oven at 350degrees F  Tray of 1 egg individual scrambles still = 15 minutes

Voila! Done!  Yes it was that easy!

PS for a gift....pre measure out some of your favorite toppings in a baggie or small jar enough for 8-10 people and give it away with a carton of eggs plus a recipe card!  SNAP!
